The Most Authentic Form of Barbecue: The Offset Smoker BBQ

There’s something magical about cooking with fire. The crackling of the wood, the scent of smoke, and the patience required to transform a piece of meat into something tender and flavorful. This is not ordinary cooking; this is craftsmanship. At Prins Barbecue Pits, we understand this passion like no one else. We don’t build standard barbecues — we craft experiences. If you’re ready for more than quick burgers on a thin steel grill, a smoker BBQ is your new best friend. Slow cooking, attention to detail, and unmatched flavor are what an offset smoker delivers.

The Offset: The King of Smokers

The world of barbecue smokers is vast, but for us, there is only one king: the offset smoker. This is the model you see in the backyards of the greatest pitmasters in Texas, and now increasingly in the Netherlands. Why? Because with a smoker of this caliber, you have complete control. You control the heat and the smoke. Whether you’re a seasoned chef or an enthusiastic home cook looking to impress the neighbors, an offset smoker guarantees the most authentic barbecue experience and optimal flavor.

What Makes an Offset Smoker Unique?

An offset smoker BBQ works differently from a standard barbecue. The fire burns in a separate chamber (the firebox), while the meat rests in the cooking chamber. Heat and smoke flow gently over the meat without direct contact with the flames.

This allows your meat to cook slowly at a low temperature while developing that signature BBQ flavor. You control the airflow and temperature, learning to work with fire rather than against it. A BBQ smoker is not just a grill; it’s an experience.

Why Steel and Wall Thickness Matter

If you’re looking to buy an offset smoker, you’ll find many thin, sheet-metal models online. They look nice in photos but lose heat quickly in a gust of wind or cooler outdoor temperatures. Steel quality and wall thickness are essential for a proper offset smoker.

Our offset smoker BBQs are hand-built from thick steel, ensuring stable temperatures, easier fire management, and consistent results. A smoker made from this material will last generations. No rusty bottoms after a couple of seasons, just a robust tool that gets better with use.

The Versatility of Our Smokers

Many people associate a smoker BBQ with large cuts of meat that take 12 hours to cook. While that’s certainly a core use, our smokers can do much more.

Thanks to the firebox equipped with a grill grate, you can also sear directly over the flames — cowboy style. Quickly caramelize a steak before letting it finish cooking slowly in the main chamber? No problem.

Our smokers are designed for creative cooks. Smoke salmon, slowly cook whole vegetables like cauliflower or pumpkin, or even bake bread with the residual heat. The plancha grill in the firebox gives you the freedom to experiment. Where a standard BBQ stops, the adventure begins with our offset smokers. The large cooking area also makes it easy to cook for big groups — a whole pig, twenty racks of ribs, or a combination of dishes. There’s plenty of space in a Prins smoker.

Custom Builds: Your Vision, Our Craftsmanship

At Prins Barbecue Pits, we don’t believe in “one size fits all.” Every pitmaster has their own preferences, and every restaurant has different capacity needs. Looking for a specific offset smoker layout? Extra thermometers, a Santa Maria-style grill, a warming cabinet, or a mobile base for rough terrain? We build it.

Our strength lies in turning your vision into something unique. Because we produce everything in-house in the Netherlands, communication is direct — you speak straight with the makers. Read on if you want a custom-built smoker. More information about customs and commercial use.

Why Choose Wood-Fired?

There are many types of smoker barbecues on the market today — popular ceramic kamados or fully automated pellet grills, for example. While these devices perform well, they often lack the soul and depth of flavor you get with a wood-fired offset smoker. A pellet grill is like an oven: push a button and wait. A Prins smoker challenges you. Using real wood (oak, beech, fruit trees) creates a far more complex flavor than compressed pellets or charcoal alone.

The airflow in an offset smoker is perfect for developing the bark — the dark, flavorful crust on the meat. The constant flow of fresh air and smoke dries the surface just enough for the perfect crunch while keeping the inside juicy. Compared to a ceramic BBQ, which traps moisture, a steel offset smoker gives better texture on large cuts. And our smokers usually have much larger capacity — where a kamado fills up quickly, a Prins offset smoker can handle a feast for the whole neighborhood.
